As you can see by the diversity of recipes below, beet root really is versatile!Not only is beet rich in vitamins and minerals, making it perfect to add to recipes for a little extra nutrient boost, but its vibrant red color that acts as a natural food dye.
Beet Root Latte
Who doesn't enjoy a warm yummy latte this time of year? This Beet Root Latte is sure to warm you up and give your body some extra nutrients to help get you through the cold months.
Ingredients
- 1 ½ cup milk of choice
- 1 tspbeet root powder
- ½ tspcinnamon
- ½ tspginger powder
- ¼ tspcardamom
- ¼ tspvanilla extract
- 1 tsp honey or agave syrup to sweeten
Instructions
- In a small saucepan over medium/low heat, add milk
- Next add the beet root powder, ginger, cinnamon & cardamom
- Whisk together and bring to a simmer
- Simmer for about 3-5 mins, whisking occasionally
- Remove pan from heat and add vanilla extract and honey or agave, whisk together
- Pour into your favorite mug and garish with a sprinkle of cinnamon, beetroot powder or some rose petals
- Enjoy!
Beet Root Hummus
Doesn't everyone enjoy a good dip? Beet root hummus is the perfect snack! Its color is brilliant and it's a great recipe to bring to a party and share, or to enjoy all to yourself.
Ingredients
- 1 15.5 oz can of chickpeas, drained and rinsed
- 2 cloves of fresh garlic, smashed and chopped
- Juice of 1 lemon
- ¼ cup tahini
- 2 tbsp extra virgin olive oil
- 1 tspground cumin
- ¼ tspsalt
- ¼ tspblack pepper
- 3 tspbeet root powder
- 4 large ice cubes
Instructions
- Add all ingredient to a food processor
- Blend on high speed for about a minute, until ingredients are well combined and texture is light, fluffy and creamy.
- Transfer hummus into a bowl or air tight container
- Drizzle with additional olive oil and sprinkle with beet root root powder. Note: For a little holiday season flare, garnish with some pomegranate seeds and some fresh rosemary sprigs.
- Store in an airtight container in the fridge for 3-4 days.
Use it to dip all your favorite dipping items, chips, pita, fresh veggies. Or use it as a sandwich spread.
Beet Root Bliss Bites
These little nutrient dense bliss bites are perfect for snacking on the go. Whether you need a pick me up at work, on your way to the gym, or your kids soccer game, these bites are sure to hold you over till your next meal.
Ingredients
- 1 cup rolled oats
- ½ cup almond or peanut butter
- 2 tbspbeet root powder
- ½ tspcinnamon
- ¼ tspsea salt
- 2 tbspcacao powder
- 3 tbsp honey or maple syrup
- ¼ cup dark chocolate chips orcacao nibs
- ¼ - ½ cup shredded coconut
Instructions
- Add all ingredients to a bowl, excluding the coconut, and mix well
- Once combined, roll into small bite-sized balls. (depending on desired consistency and sweetness you might play around and add in some more powder to make them firmer or some more sweetener to sweeten them to your liking)
- Add shredded coconut to a plate, roll balls around to coat.
- Place in an airtight container in the fridge and let chill for at least 30 mins before serving.
- Store in the fridge in an airtight container for 2 weeks.
Beet Root Smoothie Bowl
Smoothie bowls are a perfect way to start your day or are a great healthy sweet after dinner treat.
Ingredients
- 1 cup of milk of choice
- 1 banana
- ½ cup of frozen fruit (frozen berries or acai packets are great here but any fruit will do)
- 2 scoops of protein powder of choice (I use a vanilla plant based one)
- 1 tbsp ofbeet root powder
- ½ cup ice
Instructions
- Add all ingredients to a blender and blend.
- Add blended mixture to a bowl.
- Top with fresh fruit like sliced banana and berries, granola, hemp seeds, shredded coconut and a drizzle with honey.
Beet Root Electrolyte Drink
Natural electrolyte drinks are so much better for you than those sugar drinks you can grab a store. This drink is perfect for a pre or post workout drink, or to enjoy on a hot sunny day when we want to replenish our electrolytes.
Ingredients
- 1 tspbeet root powder
- 1 cup coconut water
- 1 cup filter water
- 1-2 tbsp fresh squeezed citrus juice (lemon, lime or orange)
- ¼ tspsea salt
Instructions
- In a large measuring cup add 1 cup filtered or spring water
- To the measuring cup, add salt, beet root powder and citrus juice.. Mix well.
- Transfer mixture into glass or airtight bottle.
- Add coconut water to the mixture in the glass or bottle and stir or shake well.
- Pour over ice and enjoy, or place in the fridge to chill and enjoy later.
Beet Root Protein Oatmeal
This warming nutrient dense breakfast is perfect for those colder months. A great way to start your day, giving your body the energy it needs.
Ingredients
- 1 cup milk of choice (I use organic soy for extra protein)
- ½ cup organic quick cooking oats
- 1 tsp organicbeet root powder
- 1 tsp groundcinnamon
- ½ tsp groundginger powder
- ¼ tsp groundcardamom
- 1 scoop of vanilla protein powder
- ¼ cup frozen blueberries
Instructions
- In a medium size saucepan over med/low heat, add milk, oats, and powders. Whisk together until combined.
- Add frozen blueberries. Cook on low, stirring occasionally until oats have absorbed the liquid and you have the consistency of oatmeal.
- Transfer to a bowl and top with fresh fruit, and/or a drizzle of honey or maple syrup.
